Chorizo and cheese rolls are one of the most satisfying snacks around. The spicy, smoky flavor of chorizo mixed with gooey melted cheese all wrapped up in flaky pastry is pure indulgence. They are perfect for a casual gathering or a quick bite to eat on-the-go. Whether you're looking for something to munch on during movie night or need a hearty snack after a long day, these rolls won't disappoint.

Ingredients

Lane’s Chili Lime rub
1.5 - 2lbs fresh pork chorizo
chihuahua/quesadilla or monterey jack cheese, shredded
puff pastry or crescent dough sheet
butter

Directions

Preheat grill/smoker to 350ºF
In a skillet or small pan, brown the chorizo for 7-10 minutes or until thoroughly cooked. Drain the excess grease, this is an important step to prevent your final product from being soggy.
Roll out the dough on a clean surface. Add a layer of shredded cheese first, then spread out the ground chorizo. Add a layer of Chili Lime rub and roll the dough over itself all the way down, then cut into 2” slices. It should look like a cinnamon roll when done.
Place rolls in a cast iron skillet or buttered aluminum pan sides touching on all the rolls. If you have space around them, they will spread out and flatten.
Bake/Smoke at 350ºF for 25-30 minutes until pastry is golden brown and crispy. Optionally, brush with melted butter after they are done.
Let rolls rest for 5-10 minutes, then serve and enjoy!

Recipe Note

You can use any type of breakfast sausage you like!
Use your favorite cheese or be creative and try a combo of cheeses.
These are great served with our Sorta White sauce or salsa verde.
